Country-Style Steak & Rice

This is not a pretty dish but it is quick, easy, forgiving if you don’t have all of the ingredients and warm and filling on a cold day. I buy cubed steak when on sale, lay on wax paper on a cookie sheet, freeze individually & store in a large zip bag. Later, I can take out the number I need, thaw in microwave on 2 minutes and we can be eating in about 35 minutes, long enough for the rice to cook. Yes, instant rice would be quicker–but regular rice is cheaper. I have both in my pantry. If I have the time why not save money as well?
4-6 cubes steaks
2 medium onions sliced then cut in half
1 small bell pepper diced
4-5 mushrooms thinly sliced
1-2 cups flour
salt & pepper, to taste mixed into flour
1 package Hunter Sauce/Gravy mix**
1 tbl butter
Extra Virgin Olive Oil: 5-6 Tbl as needed

Cut steaks across in half if too large. Dredge in flour mixture; set aside. Set temperature to medium on stove & drizzle enough oil to cover bottom of a 3-4 inch deep, cast iron dutch oven with lid. Brown each side of steaks & remove to plate. Do not let temperature get too high & burn steaks or flour.
Add a little more oil, if necessary and wilt onions, pepper & mushrooms. Push to the side of pot, add a tablespoon of oil & 2-3 tablespoons of leftover flour; add butter and sprinkle Hunter Gravy package on vegetables. Mix all well in pot, letting flour make a roux. Do not burn.
Add enough water (1/2 – 1 1/2 cups) to make a little too thin. Return steaks to gravy, cover with lid, lower temperature to medium low and simmer for 15-20 minutes. Run spatula under steaks to make sure they aren’t sticking.
Serve over rice or mashed potatoes; with a side of steamed broccoli or Brussels sprouts, a tossed salad or fruit & rolls. Delicious.
**The stores in my area no longer carry Hunter Gravy packages so I now add 1/2 cup thinly sliced mushrooms when adding the water and a package of herb gravy if on hand.

The first divorce directly related to the September 11 terrorist attacks has been filed in New York. Evidently a fellow with a 103rd floor office at the World Trade Center skipped work that day to spend time with his girlfriend at her apartment--with cell phone and television turned off. At 11am he turned his cell back on which rang immediately. His hysterical wife frantically asked, "Are you OK? Where are you?" To which he calmly proclaimed, "I'm fine. I'm at work in the office, of course!"
